Monkfish Stew

We made this dish three years ago to present it on the Televisión Española programme España Directo. And it came out delicious. Previously, but since then in particular, it has been one of the most popular dishes among regulars at our restaurant. If you haven’t tried it, I would encourage you to come today and sample a dish. You won’t regret it.

It is a seafood soup made from thick noodles which give consistency to a fish stock, adjusted with a little leek, carrot and green pepper and coloured with some saffron and crushed tomato. The touch of quality (and the name of the dish) comes from the monkish cut into chunks, which has been sautéed with prawns and clams.

A very Mediterranean dish: complete and light.
