Pinto Beans with Pig’s Trotters

These days, when most of us want to be slim, agile and healthy, hearty dishes like this one have unjustly earned a bad reputation.

For some reason we think a good plate of beans will do us harm. But it won’t. Nothing could be further from the truth. Beans, and in particular black ones, are an endless source of health. Black beans are full of antioxidant substances and their consumption is associated with a reduction in the risk of cardiovascular illnesses and cancer and delayed ageing.

Of course, if we add chorizo, belly pork and the pig’s trotters mentioned in the name of the recipe, things change a little...  But they are so good!

Everything is good in moderation, and we oblige the body with the healthiness of the beans and the tastiness of the rest of the ingredients. Here’s to you.
