La Granja Beans

Celebrating our Segovian roots, today we propose a gem of our cuisine, the Judiones de La Granja beans, which take their name from the Granja de San Ildefonso farm.

There they cultivate the white variety exclusively, also known as the ‘Spanish White’ or ‘Spanish Bean’. This large bean surprises diners with its very tender texture and excellent flavour. It is a product of great quality, “distinguished by its extraordinary softness following the necessary cooking, even if consumed several days after being stewed.”

Oral tradition says that the Judiones de La Granja date from the 18th Century, when Queen Isabel de Farnesio, wife of Felipe V, who was very fond of pheasant, brought these pulses from South America (Uruguay) to feed these birds.

Among its properties the Judiones de La Granja provide us with vitamins B and C, potassium, phosphorous, magnesium, calcium, iron and glucides. All essential nutrients in a healthy diet. The proportion of beans per 100 grams is around 85. Their qualities in the mouth are unique because, although remaining firm in the stewpot, they melt in the mouth to provide exquisite aromas and flavours.
